Spicy fried chicken better than KFC!
Fried chicken is without a doubt one of my favorite dishes. I grew up eating mostly pan-fried chicken but we always had a bottle of hot sauce on the table to spice things up.
Here classic buttermilk fried chicken gets a spicy twist by infusing it with spices instead of treating it as an afterthought. Chicken pieces are marinated in a tangy buttermilk mixture drenched in seasoned flour with a kick then pan-fried until crispy and golden brown on the outside and juicy on the inside.
To start you want to use skin-on bone-in chicken pieces. Any type of chicken would work but the skin is my personal favorite part of fried chicken and the bone helps keep the meat from drying out.
