I love Indian food this recipe came about after I fell in love with the dish at a small Indian family restaurant near me. After tweaking a few things I think I came up with a great copycat version. The curry paste can easily be replaced with the mild version for those with a more sensitive palate. Serve with basmati rice. I hope it suits your taste. Enjoy!
