The trick to quick meal prep is a little foresight and planning.
In this case you marinate the chicken pieces overnight but once you remove them from the marinade they will be cooked in less than 20 minutes.
My dad adapted this recipe from a recipe on the calendar of a local sausage maker of all places. We experimented a bit pounding the chicken thighs for more even cooking using olive oil instead of vegetable spray and serving it with some of my mom's wonderful Spanish rice.
