I was flipping through my notebook the other day and came across a showstopper miso soup that I absolutely love. It’s something I cook a few times a year. To be honest I’m surprised it’s taken me this long to share the recipe but here we are! The base of this soup is the broth. It’s a *punch* of flavour made up of garlic ginger spring onions toasted sesame oil miso and fermented chilli paste. The broth is creamed with a final dollop of good tahini. To build the soup I always add cubes of waxy potatoes and lots of shredded green cabbage. The whole thing is finished off with cubes of tofu and a blitz of all things summery. Cherry tomatoes are sliced into half moons baby yellow beans sweet fresh corn and basil strips are all fair game. Those of you with gardens – go ahead and plunder them.
