Hummus we love and bonus lemon hummus

This month we have a lot of air travel planned. Not to complain but traveling is one of those things where I LOVE the destination(s) but not the journey… especially the food available during the flight aka airport food. I've gotten into the habit of bringing my own food on the plane and with 12+ hours in France(!) on Friday I make a yummy to-go hummus wrap. These wraps would also make great school lunch boxes!

This recipe was inspired by the hummus wraps I bought at Whole Foods in Union Square when we flew home from NYC a few months ago. They were portable and delicious and I thought I would enjoy making a version for our flight this week.

Of course a good hummus wrap starts with good hummus so step 1 is mixing up the fresh bright “glue” that holds it together. It’s a very light very green hummus made with chickpeas tahini a little vegetable stock (which keeps it light because you can use a little less tahini) garlic herbs handfuls of spinach and a little parsley.
