How to Make Perfect Steamed Bao Buns (Chicken Baozi Recipe)

This was a little vacation project… while others were probably baking cookies Jack and I were trying steamed buns. I actually had no intention of posting this it was just something we wanted to try (we were prepared for the possibility of failure). Then I thought I should post this as a work in progress. After all the kneading waiting beating waiting rolling waiting and finally steaming… they came out pretty good but they were a little too dense and didn't rise quite enough. They were still tasty (and we ate them all) but we'll definitely have to try them again.

So this is my call for help – we’d love some tips & tricks… maybe a link to your favorite tried and true recipe? The dough seemed stiff so I’m guessing there was too much flour in it? I’m not sure if we over or under kneaded it? We followed this recipe to a T… any help? (I’ll be sure to update!) Update – we figured it out! Stay tuned for a future post with our final recipe.

Now for what went well – the filling. It’s simple (because god the steamed buns took long enough!). I’m obsessed with avocado + yuzu kosho. Yuzu kosho is a fermented Japanese chili pepper paste… it’s super spicy so a little goes a long way. If you don’t feel like foraging for it yourself a little wasabi and/or a squeeze of spicy mayo would be delicious too. Along with the avocado I marinated some shredded cabbage and finished these little guys off with some spicy sriracha.
