Personally papaya or pawpaw is one of my favorite fruits. I like to eat it for breakfast with cottage cheese and a few drops of lime or as a lightly spiced salsa with shrimp or other seafood.

Papaya is a fruit that should be eaten when it is ripe. If the fruit is just a little too unripe it is quite tasteless and lacks sweetness and flavor. If it is just a little too overripe the flesh becomes mushy and has a kind of "tired" aftertaste.

This salsa recipe combines ginger honey and lime. I find it complements ripe flavorful papaya flesh perfectly and also pairs well with fresh grilled shrimp or steamed seafood.
