If you’ve read our water velveting series you already know that this is an excellent home cooking technique for keeping meat ultra-tender in stir-fries. Unlike the more traditional method of cooking meat in a bath of hot oil water velveting meat uses boiling water with only a small amount of oil. Otherwise the velveting process is exactly the same with the meat first being marinated in a mixture of cornstarch egg whites and spices.
Today’s recipe calls for chicken strips stir-fried with a mixture of fresh and dried mushrooms along with a soy and oyster sauce sauce. The crunch of the rehydrated dried wood ear mushrooms which you can find in most Asian stores adds a nice texture to the dish. (They’re also great in other stir-fries as well as in these delicious fried vegetable dumplings .) If you’re using oyster sauce a little goes a long way so be careful not to pour too much at once.
