Growing up without a plate of Chinese vegetables on the table for dinner was like not eating rice at all: it was simply unthinkable. Quick to cook simple and delicious Chinese vegetables are a great way to add a vegetable side to your meal. In this series we’ll discuss some of the most common types of Chinese vegetables common cooking methods and a few ways to get some Western vegetables into the fold too.

Stir-frying in a light sauce with a little soy sauce and lots of garlic is my go-to method for cooking Asian vegetables. Quick simple and flavorful it’s really hard to go wrong no matter what vegetables you decide to cook.

Besides choy sum the list of other Chinese vegetables that work well in this recipe is long. Popular greens like Chinese broccoli bok choy and watercress work well but even Western greens like kale Swiss chard frisée or even romaine or iceberg lettuce are good too.
