Pavlova is a delicious Australian/New Zealand dessert consisting of baked meringues topped or layered with fruit and whipped cream. The first time I made it it was a disaster.
Early in my career I was commissioned by a local catering company to make about 100 individual pavlovas that were to be filled with fruit for a dinner party celebrating an Australian culinary personality. Up until then I had only ever made something that resembled a dessert pavlova on a plate consisting of a fully crisp meringue shell with a mousse inside. So I went all out and baked 100 shells that were crispy-crisp from the outside in. To make matters worse I practically shrink-wrapped the boxes to ensure they would stay crispy all the way through. I thought I had it all figured out until a few months later when I came across a really good recipe that explained that a good pavlova meringue is crispy on the outside with a soft marshmallow-like centre. Oops. I can only imagine people clumsily swiping through the crispy meringue sending bits of dried egg white flying everywhere.
