Strawberry Cheesecake Bars (Vegan + GF) | Minimalist Baker Recipes
It starts with our easy oatmeal almond crust which is reminiscent of a graham cracker crust and slightly adapted from our favorite Creamy Vegan Lemon Bars (GF).
Oats and almonds are mixed with a little salt and transformed into a kneadable dough with the addition of maple syrup and coconut oil.
Next we make a strawberry puree to concentrate the sweet strawberry flavor without adding too much liquid.
