Most people dread turning on their ovens in the summer. I a dessert lover have never been one; I’ve always braved the heat to take advantage of ripe berries and stone fruits by incorporating them into every cake crumble and pie I can think of. This summer however the heat has been relentless. And for the first time I’ve decided to fully embrace no-bake desserts like icebox cakes.
The beauty of an icebox cake is that there’s little to do but wait: You layer cookies or crackers with a creamy filling and let time and the cool of the fridge do the hard work. As the treat sits the crackers soften and the flavors meld creating a dessert that resembles a classic layer cake without the need for an oven.
