How to Make Sweet Potatoes Stuffed with Black Beans
I was inspired to make these little bites after I wanted to make a “nacho-esque” dish with twice-baked sweet potatoes. The idea to add black beans made sense. The two go together like PB&J. Now all I had to do was make an elegant dressing: green onion salsa manchego cheese and avocado crema.
These Mexican-inspired appetizers are super easy to make.
Bake until tender scoop out the insides and fill with black beans or your protein of choice and sprinkle with cheese. Return to the oven to reheat and bam – you have an easy starter or vegetarian main dish to share with friends… or keep it all to yourself. You decide.
