Stuffed figs recipe

This particular recipe for stuffed figs calls for chicken breast but for vegans and vegetarians the chicken breast can easily be replaced with mushrooms. Chef Basson recommends a combination of mushrooms and oyster mushrooms for this recipe.

Our story begins in 1960 when a young boy named Moshe Basson celebrated the holiday of Tu Bishvat (the New Year of Trees) by planting a small eucalyptus tree in the garden of his parents’ home in Jerusalem. Over the next few years the Basson family moved around and the tree grew large and strong. Under this tree the Basson family opened the First Eucalyptus restaurant. With a focus on local and regional produce and cuisine it immediately attracted attention. Moshe Basson used his agricultural training and passion for studying ancient scriptures to incorporate many dishes into the restaurant’s kosher menu that were inspired by foods that have been eaten in the region for centuries. Over time he became an authority on the herbs and edible wild plants native to the region and their culinary uses. As the Eucalyptus restaurant grew and gained a growing following from both Israelis and tourists Moshe continued to share the message of local food with the world. He won several food competitions and was nominated for an honorary award for "Slow Food". He also continued the family tradition by adding his son Ronny to the restaurant's management team.
