Because of this you want the beef to be as lean as possible (at least 90/10); otherwise the filling will be too fatty when the peppers bake in the oven. That said you can customize the filling to your taste by swapping out the beef for leaner options like ground turkey or ground chicken or changing the flavor profile a bit by using a mix of Italian ground pork and ground beef. Also when buying peppers look for ones that are large and plump; sometimes peppers can vary in size and you’ll want ones that will fit in the filling. This way when you core and deseed them you’ll still have plenty of pepper left over.
