I made this quick melon salad using the frog prince of melons – the piel de sapo. It has creamy sweet light green flesh and a mottled grained green-yellow exterior. Piel de sapo means toad skin. I bought mine heavily with yellow stripes edging the green on one side – both indicators of ripeness. If you come across one of these hearty summer gems spring for it. I have no regrets. Combined with some toasted almonds for crunch serrano peppers and scallions to counteract the sweet little dollops of crème fraîche cilantro and a dash of sake it's a summer pick-me-up. Especially if you take the time to cool the melon completely just before serving. I should also mention that you can make this salad even if you can't find this particular melon – sweet honeydew melon or cantaloupe would both be A+ substitutions.
