Onigiri are so cute! I always make these little rice balls to take on the go with leftover rice and whatever fillings and seasonings I have on hand. You can make them in any shape you like sometimes I use damp (slightly salted) hands other times I press them into a mold for more precision. I think it’s important not to mess around or try to make them too perfect. I recently posted a picture of this super onigiri on Instagram – no recipe. Apologies! I’ll try to make it up to you here. These are made with leftover sprouted brown rice and cooked mung beans. They’re filled with a little avocado and I quickly topped them with a layer of almond butter + miso that I popped under the broiler for a quick flash. I only used small strips of nori as wrappers because I was eating them at home but I would make a whole wrap if I was taking them with me for lunch or when traveling. You can do either.
