I make this vegan sushi all the time. Especially when the weather is warm (read: now). It’s a recipe I was planning on including in Super Natural Simple but I got rid of it at the last minute. So! They’re appearing here where I have more space to discuss the rice rolling technique and variations. And don’t worry you don’t need any special equipment to make them. This is homemade vegan sushi made with sweet potato fries seasoned tofu avocado kale chips and a mix of whole grain sushi rice. A quick squirt of strong wasabi soy sauce is my dipping sauce of choice.
