I love a wide variety of coleslaws but this mustard slaw might just be my favorite. The combination of tangy and sweet is proven to please the taste buds. Salting and massaging (also called cassaging) your cabbage first draws out the water which sweetens the flavor and gives it a flexible yet crunchy texture that I find is lacking in many other chop and mix recipes. Garnished here with chives and chive blossoms.
