Brunch food… it's probably what I cook most often but what ends up on this site the least. Saturday and Sunday mornings are just not the time to grab the camera. So to give you some ideas for a pre-Easter brunch we had eggs for dinner… something we should really do more often.
I love these types of meals because it’s a bit of a fridge cleanout. No trip to the store required you can swap it out to work with what you have. I had a sweet potato and some Brussels sprouts… and I almost always have eggs. I added toast and called it a night.
Sweet potatoes can sometimes take a long time to cook but my handy tip for this is to cut them small. The smaller the quicker.
