30-Minute Potato Cauliflower Red Lentil Curry | Minimalist Baker Recipes
This recipe is simple and only takes 30 minutes to prepare!
And it's inspired by an Indian dish called aloo gobi which usually consists of spiced cauliflower and potatoes. While it can be served on its own I prefer this saucier version*. Really good.
Instead of using regular potatoes I used sweet potatoes because the flavor of sweet potatoes lends itself so well to curry! And instead of boiling the cauliflower with the sweet potatoes I roasted them with sea salt and curry powder until crispy and golden brown. I find that roasted cauliflower has so much more flavor and better texture than braised. Plus once it's roasted it acts as the "rice" in this dish to soak up all that delicious curry sauce.
