Granola. Doesn’t it just scream fall? I love all kinds especially the pumpkin and herb varieties. Although I’ve never made pumpkin granola myself I thought sweet potato would be a fun experiment and an exciting route to take. And so I did (and quite successfully I might add).

This recipe starts with all things savory and good: nuts and oats. I chose almonds pecans and pepitas but you can use any other nuts or seeds. Just make sure they’re not toasted or they’ll burn in the oven.
This granola gets its beautiful color (partly) from sweet potato puree. Simply bake a sweet potato puree add a generous portion of the fluffy filling and add it directly to the wet ingredients. Spread the remaining portion with almond butter and spoon it directly into your face. Win-win.
Sweet potato not only provides a slight sweetness and orange color to this granola but it also offers a ton of health benefits.
