Quick and easy Japchae recipe aka Korean sweet potato noodles!!
Have you tried sweet potato noodles? In the past I have made zoodles and doodles (daikon radish noodles) but it only recently occurred to me to make swoodles(?). Is that what we call them? Anyway one evening with a hungry stomach and minimal ingredients on hand I came across this wonderful recipe for Spaghetti Aglio e Olio and realized that I could make something similar using sweet potatoes instead of pasta.
This recipe starts with 2 medium sized sweet potatoes – you’ll be surprised how many noodles they make and how much they cook in the pan. This recipe makes about 3 decent servings depending on the size of your sweet potatoes.
PS I'm a big fan of the Inspiralizer because unlike the others I've tried it clamps to your countertop. This makes the noodling process much less frustrating and you don't end up with sweet potatoes all over your floor.
