I’m writing this on a full belly the best kind of belly if you ask me. I’ve been eating leftover pancakes and a chocolate breakfast shake and it’s about 11:45am. The fact of the matter is some days you work from home and don’t wake up until 8:30am and don’t shower until 10am which means you don’t have coffee until 11am and don’t have an appetite for breakfast until 12pm. But if you ask me what’s the big deal? My belly is fed anyway…

EASY recipe for crispy parmesan sweet potato stacks

Speaking of full bellies this sweet potato gratin filled me up. Sliced sweet potatoes with a small yellow potato in the mix sprinkled with a dash of thyme lots of freshly grated parmesan cheese and baked to perfection – this is the breakfast brunch and lunch snack of champions.

I love how easy this dish is to make. It’s rustic in nature: loosely sliced sweet potatoes a pinch of salt pepper and thyme freshly grated cheese and a splash of milk. Pop it in the oven for an hour and you’ll have a beautiful and tasty dish. I personally love to eat it as an addition to lunch but it would also be perfect with eggs or fruit for breakfast or as an afternoon snack.

The best part? It’s nice and warm and room temperature which means it’s a no-fuss meal. If you haven’t guessed that’s my kind of meal.
