I love sweet potatoes. Sweet potato fries potato chips pancakes waffles muffins. You name it I’ve tried it and probably loved it. But when my brilliant friend Alina invited John and me over for dinner a few weeks ago she served us sweet potatoes like I’d never had them before: roasted in fresh dill. My friends I’m never going back to regular.

This recipe is so simple but lends itself to so many different serving options. You can serve it on its own add a protein while roasting it like chicken thighs whip it up for breakfast alongside eggs or use it as a frittata “crust.” The options are endless and all delicious.

The recipe is also quick and easy. Cut sweet potatoes with skin in cubes and some white onions and mix everything together with olive oil whole cloves of garlic a pinch of salt and pepper and a load of fresh dill. Let it roast for about 40 minutes and then do with it as you like.

I chose to throw mine over a bed of spinach and added a handful of toasted walnuts and blue cheese. I was in warm salad heaven.
