Taro is a purple root vegetable that looks like a sweet potato and is used in Asian recipes. Taro tapioca and rock sugar can be found in most Chinese supermarkets. This recipe comes from the mother of one of my best friends and I have loved it for years. It is a traditional Asian dessert and like most it is a sweet soup. It can be served hot or cold. I eat it hot the first night and put the rest in the fridge for a second time the next day! It seems a bit thicker when served cold.

Taro Coconut and Tapioca Dessert
1 cup small white tapioca pearls
2 cups raw taro root peeled and cut into 1/2 inch cubes
1 can (390 ml) coconut milk
