My intention here was to make a chilled pureed Thai curry soup. It would be summery and refreshing yet strong with green curry flavours. A fantastic lunch just over the horizon. As you can see from the photos that’s not what happened. Instead we have a hearty courgette soup beautifully spiced with a thin clear assertive coconut lime curry broth. And it was better than the soup I had originally envisioned. Here’s why.
