Fall isn’t the time to put away your grill. Not only does the cooler season make it more comfortable to stand by a sizzling fire it also offers a variety of seasonal treats to throw over the flames. To give you plenty of ideas here are ten fall vegetables that are great when grilled along with instructions on how to prepare them.

There’s nothing about the fall harvest that gets me more excited than sweet potatoes. Sure they’re available year-round but their hearty sweetness and deep orange color are a signature of fall. You can easily tell how much I love them by the number of grilling recipes I’ve developed for them over the years. I’ve roasted them in the coals sliced them made them into salads pureed them and even sliced them Hasselback style. Their versatility is matched by their deliciousness in every single one of these recipes.

It took me a while to get to know Brussels sprouts. I never understood the appeal of these semi-bitter little cabbages until I saw them cooked until crispy on the outside. Luckily the high direct heat of the grill is perfect for that effect. For the best texture they can be softened on the inside by parboiling them before grilling or by roasting them over indirect heat on the grill either before or after searing them over the coals.
