Chef José Andrés on cooking in disaster zones and creating a restaurant empire | BBC News

Sometimes it’s hard to imagine our favorite chefs as budding cooks especially someone like Chef José Andrés. Born in Spain Andrés immigrated to the U.S. in 1991 where he founded a group of 31 highly regarded restaurants that have won numerous awards over the years.

Andrés is a James Beard Award-winning chef himself and is also known for his humanitarian efforts through his organization World Central Kitchen which provides aid to communities in need of relief from disasters and other crises. And during a conversation with host Sabrina Medora on a recent episode of the Homemade the Allrecipes podcast Andrés shared the advice he received that forever changed his approach to cooking.

“My father showed me the power of fire and showed me that controlling the fire was more important than cooking” he says. “And one day when I got angry because I wanted to cook and he needed my help to make the fire he took me aside and said ‘My son everybody wants to control the fire. Everybody wants to cook right away. Nobody talks about the fire about controlling the fire knowing the fire knowing your fire. Control your fire and then you can cook the way you want.’”
