The Bear | S3 Opening Scene: Carmy's Reflection | FX

FX’s hit original series “The Bear” — which follows Carmy Berzatto (played by Jeremy Allen White) a chef who returns to Chicago to save his family’s sandwich shop — doesn’t shy away from depicting the stresses of the restaurant industry. Season three is no different especially as the chaotic Berzatto clan has transformed their modest Italian beef joint into an ambitious restaurant called The Bear. Sure the food is amazing but the cost of an ever-changing menu — the embodiment of Carmy’s non-negotiables (a list of his restaurant must-haves) — catches up to The Bear.

In Season 3 Episode 5 the Bear team meets investor Uncle Jimmy (Oliver Platt) and his numbers guy The Computer who tell them that the restaurant is losing money. Faced with the high costs and the ominous news that the Michelin-starred restaurant where he got his early training is closing Carmy begins to consider the dire possibility that The Bear is doomed.

While “The Bear” follows a fictional restaurant the looming threat of closure is an all-too-familiar one for new restaurants in the real world. According to data from the National Restaurant Association about 60% of restaurants fail in their first year while 80% fail within the first five years. Between slim profit margins and inventory issues the odds are stacked against new eateries — even if they’re popular. As “The Bear” shows when it comes to money it’s all a balancing act and running a new restaurant often requires reining in creativity and making compromises on microgreens.
