The fact that I’m eating any variation of egg salad at all is a sign that these are strange and alarming times. I don’t know what came over me – I get an egg salad craving about once every five to eight years so even without the new addition of avocado this was a pretty big deal.
But then I used pureed avocado as a base instead of mayonnaise.
