Summertime means I’m getting the grill out! When I’m cooking outside I usually like to stick to the basics and not mess around. That often means grabbing some chicken and putting a rub on it before grilling.
I like to make my own spice rub because I can control what goes into it and customize it to my own taste. If you have a ready-made batch of the rub in the pantry dinner is ready in no time.
This chicken rub uses a lot of paprika along with granulated garlic and onion powder. It also has spicy notes with the addition of oregano and dried thyme. The cilantro adds a floral citrus note that goes well with the neutral flavor of the chicken.
