How many times have I heard this question? How many times have I asked it? Years ago my sister took on the role of family matzo ball maker and the secrets to her light airy balls were unknown to me. I mean I knew all the common tricks—baking soda seltzer guilt-inducing self-sacrifice—but since I’d never tried them myself I had no idea what would really make a difference. For a long time I was content to be a self-centered matzo ball eater but this year I decided it was time to learn what really goes into the best matzo balls by making dozens of them myself and isolating the most common variables to figure out what each one does.
