There are two kinds of disappointment in the kitchen. The first is when you know that your subpar meal is your own fault and that if you had paid a little more attention you wouldn’t have eaten such an unsatisfying meal. The second is when the problem lies with subpar ingredients that aren’t what you know they could and should be. I’ve had this happen to me sometimes with ready-made paneer a convenience product that too often cooks up hard and rubbery. It’s especially upsetting if you’ve ever eaten good quality freshly made paneer and know how deliciously milky and light it can be.
