If I could eat an éclair every day I would be a very happy man. Unfortunately I don’t live in France or anywhere near a French bakery and I certainly don’t have the time or energy to make éclairs at home on a regular basis. I save éclairs for special occasions and even then I have a hard time convincing myself that filling and icing an entire tray with tiny choux pastry fingers is worth it. The good news is that there are two different ways to make large éclair cakes that are reminiscent of the original without inducing carpal tunnel.
