Grill Hacks: Turn Your Charcoal Grill Into a Smoker

When you put the blueprints for a grill and a smoker side by side you’ll notice they have a lot in common. Both have a heat source an air intake a main cooking chamber with grates and a flue. The main difference? In a smoker the heat source is used to smolder wood chips which creates flavorful plumes of smoke that slowly cook your food. In a grill the heat source has a direct hand in cooking your food.

So if you can somehow modify your grill to smolder wood chips it should also be able to function as a smoker. Luckily it’s totally doable — here’s what to do.

Since a grill doesn’t come with a wood chip tray you’ll have to improvise a little. Take your wood chips and wrap them in aluminum foil so that you have a small package. Then use scissors or a knife to poke a few holes on top. These are your vents which will allow the smoke to escape and provide your cooking chamber with its great flavor.
