This quinoa power bowl is the kind of lunch I loved to throw together when we were working out of our studio in San Francisco’s Chinatown. It was something I made regularly because it ticked all the boxes: interesting seasonal filling and nutritious. The base is mung beans and quinoa with lots of yummy stuff on top. I’d say the magic *really* comes from the deep-fried seasoned celery. The celery adds an incredible amount of flavor and depth to the rest of the dish and it welcomes all sorts of other toppings—roasted cherry tomatoes salted dill yogurt quick pickled red onions chopped olives.
