Bread is the stuff of toast for breakfast and sandwiches for lunch and the perfect way to mop up sauce and dip soup for dinner. I love all kinds and keep both soft supermarket loaf and crusty bakery loaf on hand for when I’m craving carbs (which let’s face it is every meal). But if like me you’ve ever had a loaf of bread go stale or go moldy faster than you expected you may still be confused about how to store bread.

Your first thought might be “the fridge.” It’s where my parents always stored their loaves of bread. And while that may seem obvious it’s actually one of the worst places to store bread. To find out the facts I reached out to baking legend Randy George owner of Red Hen Baking in Middlesex Vermont. Here’s everything you need to know about storing bread keeping it fresh and extending its shelf life.

Short answer: Yes. Very bad. “Refrigerators are dry environments” George explains. Since bread’s inherent moisture is part of what makes it so delicious bread will age (and become stale) more quickly in a dry environment. If you want your bread to last as long as possible and not dry out definitely do not store it in the refrigerator.
