It’s officially spring! The abundance of produce that floods the summer farmers markets is starting to trickle in and this time of year might just be my favorite time to score flavorful fresh (and fleeting!) veggies. I’m talking pea shoots fava beans artichokes and of course asparagus.
Now asparagus is available all year round in many supermarkets and I must admit that sometimes in the off-season I succumb to a sad-looking bunch. But nothing beats fresh spring asparagus: it is fragrant and flowery and in my humble opinion even tastes like the color green itself! I eat as many green bundles of this delicate vegetable as I can during the short season.
