True lettuces belong to the genus and species Lactuca sativa. "Lactuca" comes from the Latin word "lac" for dairy referring to the thick white latex that the lettuce plant exudes when cut. Most lettuces are grown for their leaves but one type of celtuce (also known as stalk lettuce) is grown for its thick stem.
In general lettuces are best for the cool weather of spring and early summer before the heat and long days cause them to become brittle and bitter. Look for lettuce at farmers markets year-round in extreme temperate climates in the fall and spring in primarily temperate areas and in the late spring through summer months in cooler climates. Many lettuces such as leaf lettuce and iceberg can be found year-round in most grocery stores.
