The recipes you'll find here are vegetarian often vegan and written with the home cook in mind. This site has been my online "home base" for almost twenty years. It was originally built on the premise that once you own over 100 cookbooks (raise your hand!) it's time to stop buying and start cooking. This site chronicles a cookbook collection one (vegetarian) recipe at a time. But there's more to the story now that we're a few decades into it here's a little background on me and the site…

By request! Vegan fish tacos. Or maybe they should be vegan “fish” tacos. Either way here’s why I’m sharing the details today. A few weeks ago I posted the coleslaw recipe that I make on repeat throughout the year. In the post I mentioned one of my favorite ways to enjoy it – piled into these tacos. Specific details were requested and here we are! The recipe is a bit of a weirdo that came about one day when I was pulling things out of the fridge – slaw tofu tortillas. This was a no-brainer meal that has since become one of my favorite ten-minute lunches. Quickly marinated tofu slices are coated in a light dusting of cornstarch and cooked until golden brown. Tacos are assembled with a good layer of avocado the tofu tempeh bacon (double up if you want to) and finished off after browning in a pan with a few generous scoops of this spicy sesame coleslaw. Each component can be made ahead of time and will keep for days in your fridge. When it's taco time – cook the tofu and/or tempeh assemble your taco and top it off with the coleslaw. I'll also include a photo below. Sometimes I'll create a bowl situation with the components of the vegan "fish" tacos by substituting soba noodles for the tortillas.
