Blender soups are great because you often only need a few ingredients. Start with a seasonal ingredient that you always have on hand like butternut squash broccoli tomatoes or asparagus. Then maybe add an onion some stock or water some herbs or spices boom – you have everything you need to make a beautiful silky soup. A soup like this can be ready in under fifteen minutes – you cook down the aromatics add the main vegetable along with some stock or favorite liquid and simmer until the veggies are tender. Then you can loosely mix in more seasonings and toppings. I'm throwing around the term blender loosely here. If you don't have a traditional blender an immersion blender will work just fine. They work great especially if you're one of those people who avoids using a blender because of the cleanup. 😉 A high-speed blender can give an extra smooth beautiful texture but I used an immersion blender to make these types of soups for years before taking the high-speed plunge. Still delicious.
