My mother always made sure there was something green on the table whether it was fried spinach with Parmesan cheese from a green container baby peas from a silver tin from Le Sueur (which I thought was SO chic as a child) or green beans from my grandparents' garden.
I have been living alone for over 15 years now and although the vegetables I serve are a little different than what my mother used to serve I still think that dinner is not complete without a green vegetable. What a force of habit!
