As a mom it’s always hard to make breakfast for myself. The morning to-do list is endless: making lunches filling water bottles helping finish homework assignments and feeding the kids breakfast! My personal needs take a back seat. If you see me in my pajamas at the bus stop you’ll know what I mean.
But I NEVER skip my coffee. As my 7 year old says “Adults need coffee to survive.” I taught him that well. That said my bad habit of skipping breakfast and then chugging my coffee first thing in the morning leaves me feeling shaky sluggish and jittery by 9am. I eat eggs for lunch but I had to find something to satisfy my protein needs to keep me full earlier in the day. Something with minimal mess and cleanup which made my already chaotic mornings even worse.
