Anthony Bourdain – Why Restaurant Vegetables Taste So Good

Anthony Bourdain was like that kid in high school who was so cool you couldn’t help but want them to like you. He never beat around the bush when it came to what he saw as fake phony sell-outs and bad food.
Unfortunately for me he heaped his eloquent disdain on vegetarians and vegans. As he said in his book Kitchen Confidential “Vegetarians and their Hezbollah-like splinter group the vegans…are the enemy of everything that is good and decent in the human spirit.” I’ve cooked and written about vegetarian and vegan food for years. Yet I read and watched everything Bourdain did; there was too much good in it to take it personally. I wasn’t the only veg-head paying attention.
