I grow and can hundreds of pounds of fresh produce each year so you’d think I’d be old friends with a vacuum sealer. Yet for a long time I shied away from adding this little gadget to my cramped kitchen. Instead I packaged my harvest in resealable washable plastic bags and containers arguing that I’d have to constantly open bags for a cube of basil pesto or a handful of corn kernels and that I hated the idea of single-use plastic.
