The cake needs a long slow baking time and a little TLC. It is full of sugars fruit and brandy and if the temperature is any higher the outside of the cake will burn and the inside will be undercooked. In addition the cake will benefit greatly from being placed on a layer of newspaper while it is in the oven; this will help to insulate and protect the cake so that it cooks evenly. Avoid opening the oven door too often during baking as this can cause the cake to collapse.

Ideally Christmas cake should be made at least two months before Christmas so that the cake has enough time to be fed regularly with brandy which in turn helps the cake to mature. However if you make it closer to the holidays you can be sure that the cake will still taste just as good although it may not keep as long as a mature cake (the brandy helps to keep it moist).

If you have time you can also soak the dried fruit in a little extra brandy the night before and finish the recipe the next day. This will give you an even moister cake.
