Westerners have very specific ideas about breakfast. The usual foods are toast cereal pancakes donuts and eggs which is the norm. In China there is a very different expectation for breakfast. It is often savory and has intense flavors that are unusual for American breakfasts. In large cities in China people often eat breakfast on the go picking up food from street vendors that sell a variety of options from congee to steamed buns and pancakes.

Many Asians start their day with a warm comforting bowl of congee (Chinese rice porridge) also known as zhou jook or chok. While even the most dedicated porridge fan may balk at the thought of eating the same thing every day the many ways to prepare it ensure it never becomes tiresome. Depending on personal preference congee can be savory or sweet. Many variations of congee incorporate different types of protein such as chicken pork beef fish seafood or tofu. Meat added to congee simmers during the long cooking process allowing the flavors to meld together and creating a hearty more substantial protein-packed dish.

Just as a cup of café au lait and a croissant are de rigueur for the French Chinese crullers are among the many choices to serve with congee. Also known as oil-fried devils these strips of fried dough are popular options available at many outdoor food markets. They are usually dipped in warm congee much like a doughnut would be dipped in coffee. In northern China where wheat is the staple crop crullers (youtiao in Chinese) are served dipped in a sweet or salty soy milk drink.
