This classic Irish dish combines potatoes and kale into a hearty mash that pairs perfectly with corned beef and cabbage lamb shanks and just about any hearty meat dish. I learned to make it from my Irish grandmother who told me that her family would use whatever vegetables they had on hand to complement the potatoes—cabbage broccoli collards kale sorrel watercress or even seaweed if the going got tough. The lesson learned is that this recipe is as adaptable and frugal as it is delicious.

The word colcannon is derived from the Irish word for white cabbage cál ceannann. Ultimately many words associated with the brassica family of vegetables (cabbage kale mustard greens etc.) come from the Latin word for cabbage caulis. Think "kale" "colewort" (an archaic name for non-headed cabbages) and "collard greens".
