Make porridge like a Scot! BUT with a twist

Oats have been grown in Scotland as a staple food for crofters since the late Middle Ages. With no method of preserving oats they were made into a thick paste which was then cooled and stored in a wooden porridge tray from where it was eaten for several days. When cold the mixture becomes thick and firm and is served thickly sliced for lunch or baked for breakfast.

Originally made with just water and salt the paste or porridge as it became known bore little resemblance to the thick creamy mixture we know today. The traditional Scottish dish can have many flavors and textures. Some like it thick and sweet others salty. Instant porridge (rejected by porridge purists) is often smooth and lighter in consistency. These variations are all a matter of personal preference and can vary based on the oats used and the cooking method.
